There is something so special about the combination of pumpkin and chocolate during the cooler months. These muffins are a long time favorite in my kitchen because they stay incredibly soft while using better ingredients than your average bakery muffin.

My best tip for getting that pretty look is to not overmix the batters when you swirl them together. You want to see distinct ribbons of chocolate and pumpkin, so just give it a gentle touch with a toothpick or a knife.

  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons hot water

    Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with paper liners.

    In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, and salt.

    In a separate bowl, mix the pumpkin puree, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.

    Pour the wet ingredients into the dry ingredients and stir until just combined.

    Remove about one cup of the batter and put it into a small bowl. Stir in the cocoa powder and hot water until you have a smooth chocolate batter.
