There is something so special about baking a pie when the weather gets chilly. This recipe takes tender pears and mixes them with just enough bourbon to make the flavors pop, then covers it all in a buttery, nutty crumble that beats a standard crust any day.

My favorite thing about this pie is how the salted caramel sinks into the pears while it bakes. If you have guests coming over, just add a scoop of vanilla ice cream on the side and you will be the star of the evening.

🧺 Ingredients

  • 1 double crust pie dough, store bought or homemade
  • 6 cups pears, peeled and sliced
  • 1/4 cup bourbon
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1/2 cup salted caramel sauce
  • 1 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, cold and cubed
  • 1/2 cup pecans, chopped

👩‍🍳Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

Roll out your pie dough and place it into a 9 inch pie dish, trimming the edges to fit.

  3. 3

In a large bowl, toss the sliced pears with the bourbon, granulated sugar, lemon juice, and cornstarch until everything is well coated.

  4. 4

Pour the pear mixture into the pie crust.

  5. 5

In a separate medium bowl, mix the flour, brown sugar, and pecans. Use a fork or your fingers to cut in the cold butter until the mixture looks like coarse crumbs.

  6. 6

Sprinkle the crumble mixture evenly over the top of the pears.

  7. 7

Bake for 45 to 50 minutes until the crust is golden brown and the filling is bubbly.

  8. 8

Let the pie cool for at least 30 minutes before drizzling the salted caramel sauce over the top.

💡 Tips

Store any leftovers in the refrigerator covered with foil for up to three days. For the best experience, warm up individual slices in the microwave for a few seconds before serving with a fresh scoop of cold vanilla ice cream.
