If you have a bag of frozen potstickers in your freezer, you are already halfway to a delicious dinner. This bake is one of my favorite ways to get a complete meal on the table without standing over the stove for hours. By layering the rice, broth, veggies, and dumplings in one pan, the oven does all the hard work for you.

People love this dish because it tastes like takeout but comes together with very little effort. I recommend using jasmine or basmati rice to get the best texture. If you want a bit of extra kick, feel free to drizzle some chili crisp or spicy mayo over the top right before serving.

๐Ÿงบ Ingredients

  • 1 1/2 cups long grain white rice
  • 2 1/2 cups chicken broth
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 3 teaspoons ginger, minced
  • 2 teaspoons sesame oil
  • 1 teaspoon rice vinegar
  • 2 cups chopped bok choy
  • 1 cup shredded carrots
  • 20 to 24 frozen potstickers
  • Green onions and sesame seeds for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and lightly spray a 9x13 inch baking dish with nonstick cooking spray.

  2. 2

In the baking dish, combine the rice, chicken broth, soy sauce, garlic, ginger, sesame oil, and rice vinegar. Stir everything well until combined.

  3. 3

Add the chopped bok choy and shredded carrots over the top of the rice mixture.

  4. 4

Arrange the frozen potstickers in a single layer on top of the vegetables.

  5. 5

Cover the baking dish tightly with aluminum foil and bake for 45 minutes.

  6. 6

Carefully remove the foil and check that the rice is tender and the liquid is absorbed. If the rice is still firm, cover it back up and bake for a few more minutes.

  7. 7

Drizzle with your favorite dipping sauce and garnish with green onions and sesame seeds before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the refrigerator for up to 4 days. When reheating, add a small splash of broth or water to keep the rice from drying out, then microwave until warm.
