There is nothing quite like a fresh lemon poppy seed muffin to start your day on a happy note. These muffins have that wonderful bakery style texture that is soft on the inside with just a little crunch from the poppy seeds.

My favorite trick for the best flavor is to rub the lemon zest into the sugar before mixing everything else. It really pulls all those bright oils out and makes the muffins smell amazing while they bake.

  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder

  • 2 tablespoons poppy seeds

  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar for the glaze
  • 1 tablespoon fresh lemon juice for the glaze
