There is nothing quite like a meal that comes together in one single pot. This beef and rice dish is a family favorite because it combines tender pieces of chuck roast with sweet carrots and fragrant spices, making it the perfect choice for a busy weeknight. It fills the kitchen with such a warm and inviting aroma that everyone will be ready to eat the moment you take it off the stove.

My secret for the best flavor is using whole heads of garlic. When they simmer along with the beef, the cloves turn soft and mellow. Once the dish is finished, just squeeze the roasted garlic right into the rice. It adds a lovely depth to the meal that you will absolutely love. Plus, the leftovers are even better the next day.

🧺 Ingredients

  • 1/4 cup olive oil
  • 2 pounds cubed chuck roast
  • 1 large onion, diced
  • 3 large carrots, julienned
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 2 bay leaves
  • 2 1/2 cups beef broth
  • 2 small whole garlic heads, bases trimmed
  • 3 cups long grain rice
  • 4 cups water

👩‍🍳Instructions

  1. 1

Heat the olive oil in a large Dutch oven over medium high heat.

  2. 2

Add the cubed beef and cook until browned on all sides, which takes about 5 minutes.

  3. 3

Reduce the heat to medium and stir in the onion, carrots, salt, pepper, paprika, cumin, and bay leaves. Sauté for about 5 minutes until the vegetables start to soften.

  4. 4

Pour in the beef broth and place the garlic heads into the pot. Cover and cook on low heat for 45 minutes or until the beef is tender.

  5. 5

While the beef simmers, rinse the rice under cold water until the water runs clear, then drain well.

  6. 6

Add the rice to the pot, pour in the water, and cover again. Continue to cook on low heat for 20 to 25 minutes or until the rice is tender and the liquid is absorbed.

  7. 7

Remove the bay leaves and the garlic heads. Squeeze the soft garlic cloves out of their skins into the rice and give everything a gentle stir before serving.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a small splash of beef broth or water to the pot to help the rice steam back to its original fluffy texture.
