This broiled salmon is one of my favorite go to recipes when I want something healthy that does not take all night to prepare. It is light, flaky, and tastes just like summer on a plate.

The secret is the fruit salad on the side, which adds a lovely sweetness that pairs perfectly with the savory fish. My family loves how fast this comes together on a busy weeknight.

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 1 cup diced strawberries
  • 1 cup blueberries
  • 1 cup diced peaches
  • 1 tablespoon fresh mint, chopped
  • Brown rice cakes for serving
