If you love a good chicken Caesar salad, you are going to adore this fun twist. It takes all the savory, creamy elements you crave and tucks them into a perfectly crispy, golden tortilla for the ultimate handheld dinner.

These are such a quick and easy meal for busy weeknights when you want something different. The trick to the best crust is pressing the chicken side down firmly into the pan, which creates that lovely golden texture we all love.

๐Ÿงบ Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt to taste
  • 2 to 3 cups romaine lettuce, finely shredded
  • 1/2 cup pepperoncini, sliced
  • 1/4 cup Parmesan cheese, freshly grated
  • 1 lb ground chicken
  • 1 tablespoon chicken seasoning
  • Salt and pepper to taste
  • 6 to 8 small flour tortillas
  • Avocado oil for frying

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Whisk the mayonnaise, yogurt, Dijon, Worcestershire, lemon juice, garlic, and salt in a bowl until smooth to make your sauce.

  2. 2

In a separate bowl, toss the shredded romaine, pepperoncini, Parmesan, and half of the prepared Caesar sauce together. Thin the remaining sauce with a little water if you want a lighter consistency for dunking.

  3. 3

Season the ground chicken with your chosen seasoning, salt, and pepper. Spread a thin layer of the raw chicken mixture onto each tortilla, pushing it all the way to the edges.

  4. 4

Heat a thin layer of oil in a skillet over medium heat. Place the tortillas chicken side down into the pan and press them firmly with a spatula for 15 to 30 seconds.

  5. 5

Cook for 2 to 3 minutes until the chicken is browned and cooked through. Flip the tortillas and cook for another minute to crisp up the backside.

  6. 6

Remove the tacos from the pan and carefully fold them in half while warm. Stuff the prepared Caesar salad mixture inside and serve with the extra sauce on the side.

๐Ÿ’ก Tips

Store any leftover salad mix in the fridge separately from the cooked tacos to keep everything fresh. These are best served immediately while the tortillas are still crispy and hot from the pan.
