When the leaves start changing and the air gets crisp, there is nothing I love more than a big pot of chili simmering on the stove. This recipe is a staple in my kitchen because it is so easy to put together and always fills the house with the most wonderful smell.

I find that this dish tastes even better the next day once all those spices have had time to settle into the beans and meat. It is a fantastic meal to serve when you have family visiting or just want a cozy night in with a good bowl of food.

🧺 Ingredients

  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cans kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth

    Place a large pot over medium heat and add the ground beef and diced onion.

    Cook the mixture until the beef is browned and the onions are soft, then drain any excess grease.

    Add the minced garlic and cook for about one minute until it smells fragrant.

    Stir in the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, pepper, and beef broth.

    Bring the chili to a gentle boil, then turn the heat down to low.

    Cover the pot and let it simmer for at least thirty minutes so the flavors can blend together.

    Taste and adjust the seasoning if you prefer it a little spicier or saltier.

💡 Tips

Serve this chili hot with a dollop of sour cream, some shredded cheddar cheese, and a handful of chopped green onions on top. If you have leftovers, keep them in an airtight container in the fridge for up to three days or freeze them for a quick meal later.
