Cowboy Coleslaw
This vibrant side dish gives classic coleslaw a Tex Mex twist with black beans, sweet corn, and a smoky chipotle dressing.
recipesbynani.comCowboy coleslaw is a favorite at our house because it brings so much texture and flavor to the dinner table. It is the perfect companion for backyard barbecues, grilled chicken, or even taco night. The smoky adobo sauce really brings everything together, making it stand out from your typical salad.
You can pull this together in just fifteen minutes, which makes it a life saver when you are hosting friends or family. For the best result, make sure you wait to stir in those crunchy chips until the very last second so they stay perfectly crisp.
🧺 Ingredients
- 1 bag (16 ounces) coleslaw mix
- 1 can (15 ounces) black beans, drained and rinsed
- 1 1/2 cups thawed frozen corn
- 1 1/2 cups finely diced red bell pepper
- 1/4 cup finely diced seeded jalapeno pepper
- 1/4 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- 1 bag (9.75 ounces) chili cheese Fritos
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup fresh lime juice
- 2 tablespoons adobo sauce from canned chipotles
- 2 tablespoons taco seasoning
- 1/2 teaspoon garlic powder
👩🍳Instructions
- 1
In a large bowl, toss together the coleslaw mix, black beans, corn, red bell pepper, jalapeño, green onions, and cilantro.
- 2
In a separate small bowl, whisk the mayonnaise, sour cream, lime juice, adobo sauce, taco seasoning, and garlic powder until smooth.
- 3
Pour the dressing over the vegetable mixture and toss well until everything is evenly coated.
- 4
Just before you are ready to eat, fold in the chili cheese Fritos and give it one final toss.
- 5
Serve the salad immediately while the chips are nice and crunchy.
💡 Tips
This dish is best eaten fresh because the chips will lose their crunch if they sit in the dressing for too long. If you want to get a head start, you can mix the veggies and the dressing together up to 24 hours in advance, but be sure to stir in the chips right before serving.
