Cowboy Meatballs
These hearty meatballs are packed with cheddar and bacon then simmered in a smoky, zesty BBQ sauce.
recipesbynani.comCowboy meatballs are a favorite in my house because they bring such big, bold flavors to the dinner table. They are filled with melty cheese, crispy bacon, and the perfect amount of spice to keep everyone reaching for seconds.
This recipe is a lifesaver on busy weeknights since you can prepare the meatballs ahead of time. Whether you serve them over creamy mashed potatoes or as part of a game day spread, they always disappear quickly.
🧺 Ingredients
- 1 pound lean ground beef
- 1/2 cup panko breadcrumbs
- 1/2 cup shredded cheddar cheese, plus extra for garnish
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely diced onion
- 1 large egg
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 slices bacon, chopped
- 1 can (10 ounces) Rotel
- 1 can (8 ounces) tomato sauce
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- Sliced green onions for garnish
👩🍳Instructions
- 1
In a large bowl, mix the ground beef, panko, cheddar cheese, cilantro, onion, egg, chili powder, garlic powder, salt, and pepper until well combined.
- 2
Shape the mixture into 12 large meatballs or 20 smaller ones.
- 3
Heat a large skillet over medium heat and cook the chopped bacon until it is nice and crispy.
- 4
Remove the bacon with a slotted spoon and set it aside on a plate lined with paper towels, leaving the grease in the pan.
- 5
Place the meatballs into the skillet with the bacon drippings and cook for 7 to 8 minutes, turning them occasionally until browned on all sides and cooked through.
- 6
Remove the meatballs from the skillet and set them aside on a plate, covering them with foil to keep them warm.
- 7
Add the Rotel, tomato sauce, BBQ sauce, and chicken broth to the same skillet. Whisk everything together and bring to a gentle boil.
- 8
Reduce the heat to a simmer, then return the meatballs and crispy bacon to the pan.
- 9
Cook for another 3 to 4 minutes until the sauce reduces slightly, then garnish with more cheese and green onions before serving.
💡 Tips
Use a cookie scoop to keep your meatballs the same size so they cook evenly. Be careful not to overmix the meat when forming the balls, as this keeps them tender. Leftovers store well in an airtight container in the fridge for up to three days.
