My best tip is to serve this warm right out of the oven. If you have leftovers, they keep very well in the fridge and make for a quick grab and go breakfast throughout the week.

🧺 Ingredients

  • 2 cups rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup milk of your choice
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
