There is something so comforting about a warm burrito after a long day. This recipe uses slow cooked pot roast that pulls apart perfectly and gets seasoned with a simple mix of spices for the best flavor.

My favorite thing about these is how easy they are to put together for a quick dinner. Just make sure to toast them in a hot skillet for a minute or two, as that gives the tortilla a lovely crunch while keeping the inside nice and gooey.

🧺 Ingredients

  • 2 pounds beef pot roast
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 can refried beans
  • 2 cups shredded cheddar or monterey jack cheese
  • 8 large flour tortillas

πŸ‘©β€πŸ³Instructions

  1. 1

Rub the beef with the chili powder, cumin, garlic powder, salt, and pepper.

  2. 2

Place the beef in a slow cooker, pour the beef broth around it, and cook on low for 8 hours until it is very tender.

  3. 3

Remove the beef from the slow cooker and shred it using two forks.

  4. 4

Warm the refried beans in a small saucepan or microwave until they are easy to spread.

  5. 5

Lay out a flour tortilla and spread a spoonful of beans down the center.

  6. 6

Top the beans with a generous amount of shredded beef and a sprinkle of cheese.

  7. 7

Fold in the sides of the tortilla, then roll it up tightly to enclose the filling.

  8. 8

Heat a dry skillet over medium heat and place the burritos in the pan, seam side down.

  9. 9

Cook for about 2 minutes on each side until the tortilla is golden and the cheese inside has melted.

πŸ’‘ Tips

Serve these with a side of sour cream, fresh salsa, or some sliced avocado. If you have leftovers, wrap them in foil and store them in the fridge to reheat in the oven or air fryer the next day.
