There is nothing quite like a warm bowl of chicken and dumpling soup to brighten a cold day. This recipe is a favorite in my kitchen because it is hearty, comforting, and simple enough to put together for a weeknight family dinner. Using rotisserie chicken makes the process even faster.

Everything cooks in a single pot, which makes cleanup very easy. The secret to the perfect dumplings is to handle the dough gently and let them steam undisturbed until they are pillowy and light.

🧺 Ingredients

  • 3 tablespoons olive oil or butter
  • 1 small yellow onion, diced
  • 2 large carrots, diced
  • 2 celery ribs, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 2 tablespoons all purpose flour
  • 6 cups chicken broth
  • 12 ounces evaporated milk
  • 4 cups cooked chicken, shredded or chopped
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 1/2 cups all purpose flour for dumplings
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup cold butter, diced
  • 3/4 cup milk

    Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for about 5 minutes until the vegetables soften.

    Stir in the garlic and Italian seasoning. Cook for one minute until fragrant, then stir in the 2 tablespoons of flour and cook for one additional minute.

    Slowly whisk in the chicken broth and evaporated milk. Add the cooked chicken and bay leaf, then season with salt and pepper to taste. Bring the soup to a gentle simmer.

    While the soup simmers, prepare the dumplings by combining the flour, baking powder, and salt in a bowl. Cut in the cold butter using a fork or pastry blender until crumbly.

    Pour in the milk and stir just until the dough comes together. Do not overmix.

    Drop spoonfuls of the dumpling dough evenly over the top of the simmering soup.

    Turn the heat to low, cover the pot with a tight lid, and let the dumplings steam for 15 minutes or until they are cooked through. Serve warm.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to three days. To keep the dumplings light, be sure to mix the dough only until combined and avoid lifting the pot lid while they are steaming.
