I love these overnight oats because they make my busy mornings so much easier. You just prep them the night before, and you have a delicious breakfast waiting in the fridge when you are ready to start your day.

Adding Greek yogurt and chia seeds gives this a big boost of protein and healthy fats. It keeps me full until lunch, and it tastes so much like a treat that I actually look forward to getting out of bed.

  • 1/2 cup rolled oats
  • 1/2 cup milk of your choice
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon peanut butter
  • 1 tablespoon chia seeds
  • 1/2 ripe banana, mashed
  • 1 teaspoon maple syrup or honey, optional
  • 1/4 teaspoon vanilla extract

    Take a glass jar or a sealable container and add the oats, milk, Greek yogurt, peanut butter, chia seeds, mashed banana, sweetener, and vanilla extract.

    Stir everything together very well until the peanut butter is mixed in and there are no dry pockets of oats.

    Seal the container with a lid and place it in your refrigerator.

    Let the oats soak for at least four hours, but preferably overnight, to soften the oats and thicken the mixture.

    Give it a good stir before eating and add a few extra slices of fresh banana on top if you like.

You can store these in the fridge for up to three days. If the oats get too thick, just add a tiny splash of milk to loosen them up before serving.
