Creamy Sausage, Corn, and Spinach Orzo

- 1 small onion, diced

- 1 cup orzo pasta
- 3 cups chicken broth
- 1 cup frozen corn kernels
- 3 cups fresh baby spinach
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- Salt and black pepper to taste

Store any leftovers in an airtight container in the fridge for up to three days. If the pasta absorbs too much liquid while sitting, add a splash of broth or water when you reheat it to bring back that creamy texture.
