Fall is finally here, and that means it is time for cozy bowls of food that warm you up from the inside out. This chickpea curry is one of my favorites because it is so simple to throw together on a busy weeknight when you just want something nourishing and fast.

The sauce is incredibly creamy and full of flavor. I love serving this with a little scoop of chili crisp on top for a tiny bit of heat, and a fresh cucumber salad on the side makes it a complete meal.

🧺 Ingredients

  • 1 tablespoon coconut oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons yellow curry powder
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (14 ounces) full fat coconut milk
  • 2 cups fresh baby spinach
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Cooked white rice for serving
  • Chili crisp for topping

    Heat the oil in a large skillet over medium heat.

    Add the diced onion and cook until it is soft and translucent, which usually takes about five minutes.

    Stir in the garlic, ginger, and curry powder, then cook for just one minute until it smells wonderful.

    Pour in the coconut milk and add the chickpeas, then bring the mixture to a gentle simmer.

    Let it bubble gently for about ten minutes so the sauce can thicken up slightly.

    Stir in the fresh spinach and let it wilt into the sauce, which should only take a minute or two.

    Turn off the heat and stir in the lime juice, then season with salt and pepper to your liking.

    Serve the curry in warm bowls over fluffy rice and top with a spoonful of chili crisp if you like a little kick.

💡 Tips

Store any leftovers in a sealed container in the fridge for up to three days. It actually tastes even better the next day after the flavors have had time to settle. You can also add a splash of water when reheating if the sauce gets too thick.
