This chia pudding is one of my favorite things to prep because it feels like a treat while being packed with good ingredients. It is simple enough for a busy morning but special enough to feel like a dessert.

My best tip is to let it sit in the fridge for at least a few hours so the chia seeds soak up all that liquid and get perfectly thick. It tastes wonderful when the berries are at their peak sweetness.

  • 1 cup fresh strawberries
  • 1 cup unsweetened almond milk
  • 1 tablespoon maple syrup or honey
  • 1/4 cup chia seeds
  • 1/4 teaspoon vanilla extract

Store your leftover pudding in an airtight container in the fridge for up to four days. If you want a little extra crunch, top your bowl with some toasted almonds or fresh strawberry slices right before you serve it.
