There is nothing better than having a protein packed breakfast ready to go when you are rushing out the door. These egg bites are a staple in my kitchen because they are so simple to pull together and taste just as good as the ones from the coffee shop.

I love using a silicone muffin mold to get these perfect every time. Just make sure to grease the cups well so they pop right out, and feel free to swap in your favorite cheese or leftover veggies if you want to mix things up.

๐Ÿงบ Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 2 strips cooked bacon, crumbled
  • 1 tablespoon chopped green onions
  • Salt and black pepper to taste
  • Cooking spray or butter for the mold

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your air fryer to 300 degrees Fahrenheit.

  2. 2

Whisk the eggs, milk, salt, and pepper together in a medium bowl until well combined.

  3. 3

Grease your silicone muffin mold with cooking spray or a little butter.

  4. 4

Divide the crumbled bacon, shredded cheese, and green onions evenly among the cups in the mold.

  5. 5

Pour the egg mixture over the ingredients in each cup, filling them about three quarters of the way full.

  6. 6

Carefully place the mold into the air fryer basket.

  7. 7

Cook for 10 to 12 minutes, or until the eggs are set and slightly puffed.

  8. 8

Let the egg bites cool for a few minutes before removing them from the mold to serve.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in the microwave for 30 seconds or eat them cold on the go.
