Easy Caramelized Roasted Sweet Potato Halves
These sweet potato halves get perfectly crispy edges and tender centers without any peeling or chopping.
recipesbynani.comIf you are looking for a simple side dish that feels fancy, this is it. By roasting the potatoes cut side down in butter, you get a beautiful caramelized crust that tastes incredible every single time.
Since you do not need to peel or dice anything, this is my favorite way to serve sweet potatoes on a busy weeknight. It is low effort but always delivers big flavor that the whole family will love.
🧺 Ingredients
- 4 medium sweet potatoes, scrubbed clean and halved lengthwise
- 4 tablespoons unsalted butter, melted
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
👩🍳Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Pour the melted butter onto a large rimmed baking sheet and tilt the pan so it coats the bottom evenly.
- 3
Sprinkle the salt, pepper, garlic powder, and paprika into the butter on the pan.
- 4
Place the sweet potato halves cut side down into the seasoned butter.
- 5
Roast for 30 to 40 minutes, or until the bottoms are deeply caramelized and the potatoes are tender when pierced with a fork.
- 6
Remove from the oven, let them rest for a few minutes, and serve warm with the crispy side facing up.
💡 Tips
These are best served right out of the oven while the bottoms are still crispy. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them in a hot oven to crisp them back up.
