🧺 Ingredients
- 3 large flour tortillas
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 pound 90% lean ground beef
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounce can diced green chiles, drained
- 3 large eggs
- 1/2 cup plain Greek yogurt
- 1 teaspoon hot sauce
- 2 cups shredded sharp cheddar or pepper jack cheese, divided
👩🍳Instructions
- 1
Preheat your oven to 375 degrees Fahrenheit and lightly spray a deep dish pie plate with nonstick spray.
- 2
Arrange the tortillas in the pie plate so they overlap on the bottom and come up the sides, then lightly spray them and bake for 5 minutes.
- 3
Heat the olive oil in a large skillet over medium high heat and sauté the onion and bell peppers for 8 to 10 minutes until soft.
- 4
Add the ground beef to the skillet and cook until browned, breaking it into crumbles as you go.
- 5
Stir the chili powder, cumin, paprika, garlic powder, oregano, cayenne, salt, pepper, and green chiles into the meat mixture, then remove from heat.
- 6
Transfer the beef mixture to a bowl and let it cool for about 10 minutes to ensure the eggs will not scramble when added.
- 7
In a separate bowl, whisk together the eggs, Greek yogurt, and hot sauce until smooth.
- 8
Pour the egg mixture into the cooled beef, stir in 1 cup of the cheese, and spread everything evenly into the prepared tortilla crust.
- 9
Top with the remaining cup of cheese and loosely tent the edges of the tortillas with foil to prevent burning.
- 10
Bake for 40 to 45 minutes until the eggs are set, then let it rest for 10 minutes before slicing.
💡 Tips
Serve this warm topped with fresh avocado, salsa, extra Greek yogurt, and cilantro. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat gently in the oven or microwave.
