There is something so special about the combination of cherry, chocolate, and pistachio. I love making this version at home because it looks fancy when you slice it, but it actually comes together with just a few minutes of effort.

My secret to getting those clean lines between the layers is to let each flavor soften just enough to spread, but not enough to melt completely. Just pop the pan back in the freezer between each scoop to keep everything nice and firm.

๐Ÿงบ Ingredients

  • 1 pint cherry ice cream
  • 1 pint chocolate ice cream
  • 1 pint pistachio ice cream

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Line a standard loaf pan with a piece of parchment paper, leaving a little overhang on the sides so you can lift the ice cream out later.

  2. 2

Let the cherry ice cream sit on the counter for about 10 minutes until it is spreadable.

  3. 3

Spread the softened cherry ice cream into the bottom of the pan and smooth the top with a spatula.

  4. 4

Place the pan in the freezer for 20 minutes to firm up.

  5. 5

Repeat the same process with the chocolate ice cream, spreading it evenly over the cherry layer, then freeze for another 20 minutes.

  6. 6

Finish with the pistachio ice cream on top, smoothing it out one last time.

  7. 7

Cover the pan tightly with plastic wrap and freeze for at least 4 hours, or until the ice cream is completely solid.

  8. 8

Use the parchment paper to lift the block out of the pan, then slice it into thick bars before serving.

๐Ÿ’ก Tips

For the cleanest slices, run your knife under hot water and wipe it dry before each cut. You can keep any leftovers wrapped tightly in the freezer for up to one week. Try serving these with a sprinkle of crushed pistachios or a cherry on top for a little extra fun.
