There is something so special about waking up to dough that is ready to bake. This recipe is my go to when I want fresh bread without spending all day kneading and waiting. It stays in the fridge overnight to build up a wonderful flavor while you sleep.

My biggest tip for this bread is to be generous with the olive oil. The oil is what gives the bottom that beautiful golden crunch that makes focaccia so delicious. Don't be shy when you dimple the dough with your fingers, because those little holes are perfect for holding extra pools of oil and salt.

๐Ÿงบ Ingredients

  • 4 cups all purpose flour
  • 2 teaspoons instant yeast
  • 2 teaspoons salt
  • 2 cups warm water
  • 4 tablespoons extra virgin olive oil, plus more for the pan
  • 1 teaspoon flaky sea salt for the top

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

In a large mixing bowl, whisk together the flour, yeast, and salt.

  2. 2

Pour in the warm water and 2 tablespoons of olive oil, then stir until you have a sticky, shaggy dough.

  3. 3

Cover the bowl with plastic wrap and let it sit at room temperature for about an hour.

  4. 4

Perform one set of stretch and folds by grabbing the edge of the dough, pulling it up, and pressing it into the center. Repeat this on all four sides of the dough.

  5. 5

Place the bowl in the refrigerator for at least 12 hours or up to 24 hours.

  6. 6

The next day, grease a half sheet pan with plenty of olive oil and gently move the dough into the pan.

  7. 7

Let the dough come to room temperature and spread it out toward the edges of the pan over about 2 hours.

  8. 8

Preheat your oven to 425 degrees Fahrenheit.

  9. 9

Drizzle the top of the dough with the remaining olive oil and use your fingers to press dimples all over the surface.

  10. 10

Sprinkle with flaky sea salt and bake for 20 to 25 minutes until the top is golden brown and crisp.

๐Ÿ’ก Tips

Store any leftovers in an airtight container at room temperature for up to two days. You can refresh the crust by popping a slice in the toaster or a hot oven for a few minutes. Serve this warm alongside a bowl of soup or as a base for sandwiches.
