These bars have quickly become a favorite in my home because they are much easier to slice and share than a traditional pie. The combination of a buttery graham cracker base and the toasted pecans adds a wonderful crunch that pairs perfectly with the smooth, spiced pumpkin custard.

My biggest tip is to make sure your cream cheese is at room temperature before you start mixing the filling. This ensures that your batter stays completely smooth and free of any stubborn lumps, which makes for a much prettier bar once you cut into them.

🧺 Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup finely chopped pecans
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

    Preheat your oven to 350 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.
