You can make these right away for a quick breakfast or let the batter sit overnight in the fridge for a deeper flavor. It is a wonderful way to use up that extra sourdough discard you have sitting in your refrigerator.

🧺 Ingredients

  • 1 cup sourdough starter discard
  • 1/2 cup pure pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk

💡 Tips

If you have leftovers, you can freeze these waffles in a single layer and reheat them in the toaster for a quick meal later. Make sure to use pure pumpkin puree and not pumpkin pie filling, as the filling has extra sugar and spices already added.
