There is nothing quite like a warm scone with your morning coffee. These strawberry scones have a wonderful texture because they are perfectly crispy on the outside while staying tender and flaky on the inside.

My biggest tip for success is to keep your butter and cream as cold as possible. If your ingredients start to get warm, just pop the bowl in the fridge for a few minutes before you shape them.

๐Ÿงบ Ingredients

  • 2 cups all purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup fresh strawberries, diced small
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for the glaze
  • 2 tablespoons milk for the glaze

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. 3

Cut the cold, cubed butter into the flour mixture using a pastry cutter or your fingers until it looks like coarse crumbs.

  4. 4

Gently fold in the diced strawberries.

  5. 5

In a small separate bowl, whisk the heavy cream, egg, and vanilla extract together.

  6. 6

Pour the wet mixture into the dry ingredients and stir just until a shaggy dough forms.

  7. 7

Turn the dough onto a floured surface and pat it into an eight inch circle, then cut it into eight even wedges.

  8. 8

Place the wedges on your baking sheet and bake for 18 to 22 minutes until they are golden brown.

  9. 9

Let the scones cool completely before whisking the powdered sugar and milk together to drizzle over the top.

๐Ÿ’ก Tips

These taste best on the day they are made, but you can store leftovers in an airtight container for two days. If you want to keep them longer, wrap them tightly and freeze them for up to one month.
