My secret to getting that perfect golden crust is to avoid crowding the pan. If you give the potato cubes a little space to breathe, they crisp up beautifully instead of steaming in the skillet.

  • 2 pounds Yukon gold potatoes, cut into 1 inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chopped parsley
