Golden Honey Cornbread Loaf

- 1/2 cup sugar
- 1/4 cup honey
- 2 large eggs
- 1 cup buttermilk
- 1 1/2 cups all purpose flour
- 1 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt

Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8 1/2 by 4 1/2 inch loaf pan with cooking spray and line the bottom with a strip of parchment paper.

In a large mixing bowl, whisk together the melted butter, sugar, honey, and eggs until the mixture is smooth and combined.

Pour the buttermilk into the wet ingredients and whisk until fully incorporated.

In a separate small bowl, stir together the flour, cornmeal, baking powder, baking soda, and salt.

Gently add your dry ingredients into the wet mixture, stirring just until the flour disappears. Do not overmix the batter.

Pour the batter into your prepared loaf pan and bake for 45 to 50 minutes. The loaf is done when a toothpick inserted into the center comes out clean.

Store any leftovers in an airtight container at room temperature for up to 3 days to keep them moist. You can also freeze the loaf by wrapping it tightly in plastic wrap and placing it in a freezer bag for up to 3 months. If you want to get ahead, you can mix the batter and refrigerate it in the pan for up to 24 hours before baking, just add about 5 minutes to the total bake time.
