If you love a good fudgy brownie, you are going to fall head over heels for these. We take everything you love about a classic campfire s’more and bake it right into a rich brownie base. They might get a little messy in the oven, but that is exactly what makes them so special.

My best tip for these brownies is to line your pan with parchment paper. Because the marshmallows get very sticky as they melt, having that paper lining makes it so much easier to lift the whole batch out and slice them once they have cooled down.

🧺 Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup milk chocolate chips
  • 1 cup mini marshmallows
  • 4 full size graham cracker sheets, broken into pieces

    Preheat your oven to 350 degrees Fahrenheit and grease an 8 inch square baking pan.

    In a medium bowl, stir together the melted butter and sugar until smooth.

    Add the eggs and vanilla extract to the butter mixture, whisking until well combined.

    Sift in the flour, cocoa powder, and salt, then fold the dry ingredients into the wet ones until just incorporated.

    Gently stir in half of the chocolate chips.

    Spread the brownie batter evenly into your prepared pan.

    Press the graham cracker pieces into the top of the batter, then scatter the remaining chocolate chips and all the mini marshmallows over the top.

    Bake for 25 to 30 minutes, or until the brownies are set and the marshmallows are golden and toasted.

    Let the brownies cool completely in the pan before you attempt to cut them into squares.

💡 Tips

Store these in an airtight container at room temperature for up to three days. If the marshmallows get too firm, you can warm an individual brownie in the microwave for ten seconds to get that gooey texture back.
