There is something so fun about eating breakfast with your fingers. These golden, cinnamon dusted French toast sticks are crisp on the outside and wonderfully soft in the middle. They are much better than the frozen kind you buy at the store.

My secret to the best sticks is using thick slices of bread, like brioche or challah, because they hold up well in the egg mixture without getting soggy. If you have extra time, leave your bread slices out on the counter for an hour so they get a little stale, as this helps them soak up the custard perfectly.

  • 4 thick slices of brioche or challah bread
  • 2 large eggs
  • 1/3 cup whole milk
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • Maple syrup for serving
