Hot Honey Cornflake Baked Chicken
This crispy baked chicken is coated in crunchy cornflakes and finished with a sweet and spicy drizzle of hot honey.
recipesbynani.comThere is something so satisfying about the crunch of cornflake chicken, especially when it is baked instead of fried. This recipe creates a wonderful texture that kids and adults both love for a quick weeknight meal.
My biggest tip is to crush the cornflakes by hand so you keep a few larger pieces for extra crunch. You can control the heat of the honey by adding more or less red pepper flakes depending on how spicy your family likes it.
🧺 Ingredients
- 2 pounds chicken breasts, cut into strips
- 4 cups cornflakes cereal, crushed
- 1/2 cup all purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup honey
- 1 teaspoon red pepper flakes
👩🍳Instructions
- 1
Preheat your oven to 400 degrees and line a large baking sheet with parchment paper.
- 2
In a shallow bowl, mix the flour, garlic powder, paprika, salt, and pepper.
- 3
Place the beaten eggs in a second bowl and the crushed cornflakes in a third bowl.
- 4
Dredge each chicken strip in the flour, dip it into the eggs, and then press it firmly into the cornflakes to coat all sides.
- 5
Place the chicken on the prepared baking sheet and bake for 20 minutes or until the chicken is cooked through and the coating is golden brown.
- 6
While the chicken bakes, stir the honey and red pepper flakes together in a small bowl.
- 7
Drizzle the hot honey over the warm chicken just before serving.
💡 Tips
Serve this chicken with a side of coleslaw or roasted vegetables. Store any leftovers in an airtight container in the fridge for up to three days. To regain the crunch, reheat the chicken in a hot oven for a few minutes instead of using the microwave.
