There is something so satisfying about the crunch of cornflake chicken, especially when it is baked instead of fried. This recipe creates a wonderful texture that kids and adults both love for a quick weeknight meal.

My biggest tip is to crush the cornflakes by hand so you keep a few larger pieces for extra crunch. You can control the heat of the honey by adding more or less red pepper flakes depending on how spicy your family likes it.

  • 2 pounds chicken breasts, cut into strips
  • 4 cups cornflakes cereal, crushed
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup honey
  • 1 teaspoon red pepper flakes
