When I need a hearty dinner that keeps everyone happy, this is my go to recipe. It brings together smoky sausage, chicken, and fluffy rice in one pot, which means there is almost no cleanup for me at the end of the night.

I love using fire roasted tomatoes because they add a nice depth of flavor without extra effort. If you want a little more heat, feel free to toss in a pinch of red pepper flakes before you start the pressure cooker.

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) fire roasted diced tomatoes, undrained
  • 1 1/2 cups white long grain rice
  • 2 1/4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

    Set your Instant Pot to the saute function and heat the olive oil.

    Add the sliced sausage and chicken pieces to the pot, cooking until they are browned on all sides.

    Stir in the onion and garlic, cooking for two minutes until they soften.

    Turn off the saute function and pour in the diced tomatoes, rice, chicken broth, oregano, and paprika. Stir everything well to make sure the rice is fully submerged.

    Secure the lid and set the valve to sealing. Cook on high pressure for 8 minutes.

    Allow the pressure to release naturally for 10 minutes before switching the valve to venting to release any remaining pressure.

    Fluff the rice with a fork and season with salt and pepper to taste before serving with a sprinkle of fresh parsley.

This dish stores perfectly in the fridge for up to three days in an airtight container. If you have leftovers, add a splash of water when reheating in the microwave to keep the rice nice and moist.
