There is nothing quite like coming home to the smell of a warm meal after a busy day. This beef chili has become a staple in my kitchen because it is so easy to prepare and always hits the spot when you need something filling and cozy.

My secret for the best texture is to brown the beef in a pan before adding it to the slow cooker. It adds a lovely depth of flavor that makes the whole house smell amazing while it simmers away.

🧺 Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 2 cans kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 cans diced tomatoes, with juices
  • 1 can tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

    Place a large skillet over medium heat and cook the ground beef and onion until the meat is browned and the onion is soft.

    Drain any excess fat from the skillet.

    Transfer the beef and onion mixture into your slow cooker.

    Add the kidney beans, black beans, diced tomatoes, tomato sauce, chili powder, cumin, garlic, salt, and pepper.

    Stir everything together until well combined.

    Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

    Taste and adjust the seasoning before serving warm.

💡 Tips

Serve this chili in deep bowls topped with shredded cheddar cheese, a dollop of sour cream, and fresh chopped cilantro. Leftovers taste even better the next day, and you can store them in an airtight container in the fridge for up to four days or freeze them for up to three months.
