There is something so special about a warm potato dish that brings everyone to the table. This recipe captures all the classic flavors of a twice baked potato but makes it much easier to serve for a big family dinner or a holiday gathering.

My favorite trick for this recipe is to make sure you shred your cheese fresh from a block. It melts so much smoother than the pre shredded bags, and it really makes a big difference in how creamy the final casserole turns out.

  • 5 pounds russet potatoes
  • 1 cup sour cream
  • 1/2 cup butter, softened
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

    Preheat your oven to 350 degrees Fahrenheit and grease a 9x13 inch baking dish.

    Peel the potatoes and cut them into chunks, then boil them in salted water until they are fork tender.

    Drain the potatoes well and place them back into the pot.

    Add the butter, sour cream, milk, salt, and pepper to the pot and mash everything together until smooth.

    Stir in the minced garlic, half of the shredded cheese, half of the crumbled bacon, and half of the green onions.

    Spread the potato mixture into your prepared baking dish and top with the remaining cheese and bacon.

    Bake for 25 to 30 minutes until the cheese is melted and bubbly.

    Remove from the oven and sprinkle with the remaining green onions before serving.

You can assemble this dish a day in advance and keep it in the fridge until you are ready to bake. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them in the microwave or the oven.
