Nani's Favorite Pumpkin Sheet Cake
This soft and spiced pumpkin cake topped with smooth cream cheese frosting is always the star of the party.
recipesbynani.comI have made so many pumpkin treats over the years, but this sheet cake is the one my family keeps asking for lately. It is incredibly moist and light, with just the right amount of warm spices to make your kitchen smell amazing.
Using a large baking sheet means every slice has the perfect amount of tangy frosting. If you have any pieces left over, they are absolutely delicious with a cup of hot coffee the next morning.
🧺 Ingredients
- 2 cups all purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1 cup vegetable oil
- 4 large eggs
- 1 can (15 ounces) pumpkin puree
- 1 teaspoon vanilla extract
- 8 ounces softened cream cheese
- 1/2 cup softened unsalted butter
- 3 cups powdered sugar
- 1 teaspoon vanilla extract

Preheat your oven to 350 degrees and grease a 12 by 17 inch rimmed baking sheet.

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.

In another bowl, beat the eggs, oil, pumpkin puree, and vanilla until everything is smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spread the batter evenly into your prepared pan and bake for 20 to 25 minutes or until a toothpick comes out clean.

Let the cake cool completely in the pan while you make the frosting.

Beat the cream cheese and butter together until creamy, then slowly add the powdered sugar and vanilla.

Spread the frosting over the cooled cake and cut into squares to serve.
💡 Tips
Store any leftovers in the fridge since the frosting has cream cheese in it. This cake actually tastes even better the second day once the spices have a chance to settle.
