Everyone loves the zingy lemon flavor combined with the tender chicken and pasta.

My best tip is to stir in the lemon juice right at the very end. If you let it boil too long with the soup, the flavor can become a bit bitter, so wait until you turn off the heat to add that fresh brightness. It makes all the difference in the final taste.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth

  • 2 tablespoons fresh lemon juice
