There is nothing like the smell of fresh banana bread baking in the oven. It is the best way to use up those spotty bananas sitting on your counter, and it makes your whole house smell wonderful.

My family loves this loaf because it stays so soft for days. If you want a little extra flavor, toast your pecans in a dry pan for a few minutes before adding them to the batter.

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
