Nani's One Pot Greek Chicken Orzo

My best tip for this one is to use a good quality feta cheese. If you can buy a block and crumble it yourself, the flavor is much creamier than the pre crumbled kind you find in the bags.

- 2 cloves garlic, minced
- 1 cup dry orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted kalamata olives, sliced
- 2 cups fresh baby spinach
- 1/2 cup crumbled feta cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste

Heat the olive oil in a large skillet or pot over medium heat.

Add the chicken pieces and season with salt, pepper, and oregano. Cook until the chicken is browned on all sides.

Pour in the chicken broth and add the dry orzo. Bring the mixture to a gentle boil.

Turn the heat down to low, cover the pot, and let it simmer for about ten minutes or until the orzo is tender and most of the liquid is absorbed.

Stir in the tomatoes, olives, and fresh spinach. Keep stirring until the spinach is just wilted.

Store any leftovers in an airtight container in the fridge for up to three days. If the pasta absorbs too much liquid, add a tiny splash of water or broth when you reheat it to bring back the creamy texture.
