If you love classic holiday cracker toffee, you are going to fall for this pumpkin spice version. It has the same addictive crunch and buttery goodness, but with the warm, aromatic flavor of pumpkin pie spice that makes it feel just like autumn.

It is incredibly simple to make and always disappears quickly at parties or family gatherings. I love making a big batch to keep on hand for neighbors or to pack into little gift bags during the season.

๐Ÿงบ Ingredients

  • 35 to 40 saltine crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1.5 teaspoons pumpkin pie spice
  • 2 cups high quality white chocolate chips or melting wafers
  • 0.5 cup chopped pecans, toasted or candied

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Line a 10 by 15 inch baking sheet with parchment paper or foil, and lightly coat it with nonstick cooking spray.

  3. 3

Arrange the saltine crackers in even rows on your prepared baking sheet.

  4. 4

In a medium saucepan, combine the butter, brown sugar, and pumpkin pie spice over medium high heat.

  5. 5

Bring the mixture to a boil and let it cook for 2 to 3 minutes until the toffee reaches 270 to 290 degrees Fahrenheit.

  6. 6

Pour the hot toffee over the crackers and spread it evenly with a heat safe spatula.

  7. 7

Bake for 5 minutes, then remove the pan from the oven.

  8. 8

Immediately sprinkle the white chocolate over the hot toffee and let it sit for about 5 minutes to soften.

  9. 9

Spread the melted white chocolate into an even layer, then sprinkle with the pecans and an extra pinch of pumpkin pie spice.

  10. 10

Allow the treat to cool completely until it hardens, then break it into bite sized pieces to serve.

๐Ÿ’ก Tips

Store your pumpkin spice crack in an airtight container at room temperature for up to a week, or keep it in the freezer for a longer shelf life. If you want the perfect crisp, be sure to use a candy thermometer to reach that 270 to 290 degree range for the toffee layer.
