There is nothing quite like the smell of garlic and basil roasting in the oven. These tomatoes become incredibly juicy and sweet, making them a perfect addition to just about any meal you have planned for the week.

My favorite trick is to use whatever tomatoes look best at the market. Ripe Roma or Campari tomatoes hold their shape well, but any garden variety will taste delicious once they are roasted with a splash of balsamic vinegar.

  • 1 pound Roma or Campari tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried basil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

    Preheat your oven to 450 degrees Fahrenheit.
