Simple Japanese Vegetable Curry
A hearty and flavorful vegetarian curry that makes for a perfect healthy weeknight dinner.
recipesbynani.comJapanese vegetable curry is a staple in my kitchen when I want something comforting and filling. It is much milder and sweeter than other curry styles, which makes it a hit with both kids and adults alike. You can use whatever seasonal vegetables you have in the fridge, so feel free to mix it up based on what you have on hand.
I love serving this over a steaming bowl of brown rice for a complete meal. It is one of those dishes that actually tastes even better the next day once the flavors have had more time to meld together in the fridge.
๐งบ Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 2 large carrots, cut into chunks
- 2 medium potatoes, peeled and cut into chunks
- 3 cups vegetable broth
- 3 tablespoons Japanese curry roux cubes
- 1 teaspoon soy sauce
- 2 cups cooked brown rice for serving
๐ฉโ๐ณInstructions
- 1
Heat the vegetable oil in a large pot over medium heat.
- 2
Add the diced onions and cook until they are soft and translucent.
- 3
Add the carrots and potatoes to the pot and stir to coat them in the oil for about 2 minutes.
- 4
Pour in the vegetable broth and bring the mixture to a boil.
- 5
Turn the heat down to low, cover the pot, and simmer for about 15 minutes or until the vegetables are tender.
- 6
Turn off the heat and stir in the curry roux cubes until they are completely dissolved and the sauce has thickened.
- 7
Stir in the soy sauce and serve the curry warm over bowls of brown rice.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can reheat this gently on the stove with a tiny splash of water if the sauce becomes too thick. It freezes beautifully too, so it is great for meal prepping.
