When the week gets busy, I always turn to this reliable one pan meal. It is a wonderful way to get protein and fresh vegetables on the table in one go, and the clean up is truly a breeze.

My favorite thing about this recipe is how the juices from the chicken flavor the potatoes as they roast together. Feel free to swap the vegetables based on what you have in your fridge that day.

  • 4 chicken thighs with skin on
  • 1 pound baby potatoes cut into halves
  • 2 cups broccoli florets
  • 2 large carrots peeled and sliced into rounds
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 lemon sliced into rounds
