Simple Weeknight Roasted Tomato Pasta
This comforting pasta dish uses fresh roasted tomatoes and garlic to create a bright and savory sauce perfect for any night of the week.
recipesbynani.comThere is something so satisfying about a bowl of pasta that relies on just a few fresh ingredients. When I have a busy week ahead, I always come back to this recipe because it feels fancy but takes very little effort to pull together.
My favorite tip is to save a little bit of the pasta water before draining your noodles. Adding that starchy water to the sauce makes everything glossy and helps it coat the pasta perfectly.
๐งบ Ingredients
- 1 pound pasta of your choice
- 2 pints cherry tomatoes
- 4 cloves garlic, smashed
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste

- 1/2 cup grated parmesan cheese
๐ฉโ๐ณInstructions

Preheat your oven to 400 degrees Fahrenheit.

Place the cherry tomatoes and smashed garlic cloves on a large sheet pan.
- 3
Drizzle the olive oil over the top and sprinkle with oregano, salt, and pepper.
- 4
Roast the tomatoes for about 20 minutes until they are soft and beginning to burst.
- 5
While the tomatoes are roasting, cook your pasta in a large pot of salted water according to the package directions.

Drain the pasta but remember to set aside half a cup of the starchy cooking water.

Add the cooked pasta directly to the sheet pan with the tomatoes and toss everything together with the reserved pasta water.

๐ก Tips
You can store any leftovers in an airtight container in the fridge for up to three days. If you want to add some extra protein, grilled chicken or white beans go beautifully with these flavors.
