This smoky andouille lentil soup is exactly what I want simmering on the stove when the weather turns chilly. It is the perfect combination of protein, fiber, and garden fresh vegetables that feels substantial without being too heavy.

The secret is the base of smoky andouille sausage, fire roasted tomatoes, and a touch of smoked paprika. I like to finish the pot with a handful of fresh kale and a squeeze of bright lemon juice to tie all those savory flavors together.

๐Ÿงบ Ingredients

  • 1 tablespoon olive oil
  • 1 pound andouille sausage, sliced into rounds
  • 1 yellow onion, diced
  • 3 carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 cup dried brown or green lentils, rinsed
  • 1 can (14.5 ounces) fire roasted diced tomatoes
  • 6 cups vegetable or chicken broth
  • 4 cups chopped kale leaves
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the sliced andouille sausage and cook until it starts to brown, then remove it from the pot and set it aside.

  3. 3

Add the onion and carrots to the same pot and cook until they are soft, which usually takes about five minutes.

  4. 4

Stir in the garlic and smoked paprika and cook for one minute until fragrant.

  5. 5

Add the lentils, fire roasted tomatoes, broth, and the cooked sausage back into the pot.

  6. 6

Bring the mixture to a boil, then turn the heat down to low and cover the pot.

  7. 7

Simmer for about 30 to 40 minutes, or until the lentils are tender.

  8. 8

Stir in the chopped kale and cook for a few more minutes until the leaves have wilted.

  9. 9

Remove the pot from the heat, stir in the lemon juice, and season with salt and pepper to your preference.

๐Ÿ’ก Tips

Serve this soup with a slice of crusty sourdough bread for dipping. It keeps beautifully in the refrigerator for up to four days and the flavors actually get better the next day. You can also freeze leftovers in airtight containers for a quick meal later.
