There is nothing quite like a one pan meal when you want something tasty without all the cleanup. This chicken and rice skillet is a favorite in my kitchen because it packs in protein from the chicken and black beans alongside plenty of colorful veggies.

My best advice is to make sure you rinse your rice well before adding it to the pan. This helps keep the texture light and prevents everything from getting too sticky while it cooks.

🧺 Ingredients

  • 1 pound boneless skinless chicken breasts, diced into bite sized pieces
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced into strips
  • 1 small yellow onion, sliced
  • 1 cup white long grain rice
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: salsa, sliced avocado, pickled red onions

    Heat the olive oil in a large skillet over medium heat.

    Add the diced chicken to the pan and cook until it is browned on all sides.

    Add the sliced onion and bell pepper to the skillet and cook for about 3 minutes until they start to soften.

    Stir in the uncooked rice, chili powder, cumin, garlic powder, salt, and pepper.

    Pour in the chicken broth and stir everything together well.

    Bring the liquid to a boil then turn the heat down to low.

    Cover the pan with a tight lid and let it simmer for about 18 to 20 minutes until the rice is tender and the liquid is absorbed.

    Stir in the drained black beans and heat through for another minute.

    Serve warm topped with salsa, avocado, and pickled red onions if you like.

💡 Tips

This dish makes great leftovers for lunch the next day, just store it in an airtight container in the fridge for up to three days. If you want a little extra heat, feel free to add a pinch of cayenne pepper or serve with a side of hot sauce.
