I love making this chili because it is packed with colorful vegetables and protein from the beans. The addition of sweet potato gives it a wonderful texture and a nice subtle sweetness that balances out the savory spices perfectly.

It is a great meal to prepare when you have a busy week ahead. You can easily make this in a big pot on the stove or let your slow cooker do all the hard work for you. It tastes even better the next day after the flavors have had time to settle.

🧺 Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 large sweet potato, peeled and cubed
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup frozen corn
  • Salt and pepper to taste

    Heat the olive oil in a large pot over medium heat.

    Add the onion, sweet potato, and bell pepper to the pot and cook until they start to soften, which takes about 8 minutes.

    Stir in the garlic, chili powder, cumin, and smoked paprika and cook for another minute until fragrant.

    Pour in the black beans, kidney beans, diced tomatoes, and vegetable broth.

    Bring the mixture to a gentle boil, then turn the heat down to low and cover the pot.

    Simmer for about 30 minutes until the sweet potatoes are tender.

    Stir in the frozen corn and cook for 5 more minutes.

Serve this with a dollop of sour cream, some shredded cheese, or fresh cilantro on top. You can store leftovers in an airtight container in the fridge for up to four days or freeze them for up to three months.
