I love keeping a few of these loaves in the freezer for busy mornings or quick snacks. It is a very forgiving recipe, so feel free to mix in some chopped walnuts or dark chocolate chips if you want to make it extra special.

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup softened butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini

    In a separate small bowl, cream the butter and brown sugar together until light and fluffy. Beat in the eggs and vanilla extract.

Store your bread in an airtight container at room temperature for up to 4 days, or keep it in the fridge for a week. For longer storage, slice the bread and freeze the pieces in a freezer safe bag for up to 3 months. Serve this warm with a bit of butter or your favorite nut butter.
