If you love chicken parmesan, you are going to adore these meatballs. They have all those comforting Italian flavors we crave, but they are lighter and much easier to put together than traditional breaded cutlets.

Adding spinach into the mix is a great way to sneak in some greens, and they stay incredibly juicy while baking in the oven. My best tip is to use freshly grated parmesan cheese because it melts so much better than the pre grated kind in the green can.

🧺 Ingredients

  • 1 pound ground chicken
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter, melted
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

👩‍🍳Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and lightly grease a large baking dish.

  2. 2

In a large bowl, combine the ground chicken, chopped spinach, breadcrumbs, parmesan, egg, garlic, Italian seasoning, salt, and pepper.

  3. 3

Mix everything together gently with your hands until just combined, being careful not to overwork the meat.

  4. 4

Roll the mixture into golf ball sized rounds and place them into your prepared baking dish.

  5. 5

Drizzle the melted butter over the tops of the meatballs.

  6. 6

Bake for 15 to 20 minutes until the meatballs are cooked through and golden brown.

  7. 7

Remove the dish from the oven and carefully spoon a little marinara sauce over each meatball.

  8. 8

Sprinkle the mozzarella cheese on top and return to the oven for 5 minutes until the cheese is bubbly and melted.

💡 Tips

Serve these meatballs over a bed of spaghetti or with a side of roasted vegetables for a complete meal. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them in the oven or microwave.
