When the week gets busy, I always turn to this spiced chicken recipe. It is one of my favorite go to meals because it is healthy, comforting, and keeps the kitchen clean with just one pot to wash.

The warmth of the spices makes the chicken so flavorful, and toasting the couscous before adding the broth gives it a lovely nutty texture. My family loves how simple yet satisfying this dish is after a long day.

๐Ÿงบ Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup dry couscous
  • 1 1/4 cups chicken or vegetable broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup toasted slivered almonds

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Heat the olive oil in a large skillet or pot over medium high heat.

  2. 2

Season the chicken pieces with salt, pepper, cumin, coriander, and paprika.

  3. 3

Add the chicken to the pot and cook until golden brown and cooked through, then remove the chicken and set it aside.

  4. 4

In the same pot, add the dry couscous and toast it for 2 minutes until it smells fragrant and turns a light golden color.

  5. 5

Pour in the chicken broth and bring it to a boil.

  6. 6

Turn off the heat, cover the pot with a tight lid, and let it sit for 5 minutes so the couscous absorbs the liquid.

  7. 7

Fluff the couscous with a fork and stir the cooked chicken back in.

  8. 8

Garnish with fresh parsley and toasted almonds before serving.

๐Ÿ’ก Tips

You can store leftovers in an airtight container in the fridge for up to three days. If the couscous seems a little dry when reheating, just add a tiny splash of broth or water before warming it up in the microwave.
