There is something magical about what happens to cherry tomatoes when they spend a little time in the oven. They soften up, release their juices, and become so incredibly sweet. I love keeping a jar of these in my fridge because they make everything taste better.

You can toss these over some warm pasta, pile them onto sourdough toast with a little ricotta, or stir them into your cottage cheese for a savory snack. The trick is to give them enough room on the pan so they roast rather than steam.

🧺 Ingredients

  • 2 pints cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, peeled and smashed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Optional: a few sprigs of fresh thyme or basil

    Preheat your oven to 400 degrees Fahrenheit.

    Wash the cherry tomatoes and pat them dry with a paper towel.

    Place the tomatoes on a large rimmed baking sheet.

💡 Tips

Store these in a sealed glass jar in the refrigerator for up to five days. If you have extra oil left in the pan after roasting, save it to use as a flavorful base for a salad dressing.
