This salad is one of my favorite ways to brighten up a lunch or dinner. The combination of juicy mango and crisp greens feels so fresh, and the homemade dressing adds the perfect tangy kick to bring everything together.

My secret to this salad is using the dressing as a marinade for the chicken. It keeps the meat tender and ensures every single bite is packed with delicious flavor.

  • 2 boneless chicken breasts
  • 4 cups mixed lettuce and spinach
  • 1 large ripe mango, peeled and diced
  • 1 cup fresh strawberries, sliced
  • 1 cucumber, sliced
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
